Baked Potato Soup

I love soup this time of year. Last night my husband asked me what my favorite "comfort foods" were, and I told him hands down homemade mashed potatoes and hot soup. There's just something so relaxing and comforting about sitting down with a big bowl of hot creamy goodness....it's the best! I love this recipe and wanted to share with you.
The great thing is that this soup is rich and creamy and filling, but not horribly bad for you when it comes to calories.  We balance out the use of cheese and bacon with skim milk and low-fat sour cream.  You start with just a couple pats of butter.

Toss it in a pan with some garlic.  Butter and garlic cooking on the stove is one of the best smells in the world, in case you didn't know.  Someone should make a candle for that.

Then toss in some flour and low-fat or skim milk

and then a little trick of mine- instead of all milk, I add some chicken broth as well.  It adds an extra layer of flavor.

When the soup thickens up, in goes potatoes.  You can use leftover baked potatoes, or bake them before you make the soup, or use my trick- the microwave!

then add cheese and salt and pepper.  Extra sharp cheddar adds great  flavor, but regular plain ol' mild cheddar works great too.  One tip I have though, is to grate your own cheese.  Pre-shredded cheese doesn't work as well in things like this because it doesn't melt as well.

Take the pan off the heat and stir in a little low-fat sour cream, some green onions, and bacon.  Mmm bacon.  Someone should make me a candle of that too.

To serve, top it off with some extra cheese, bacon, onions, and sour cream.  And a big chunk of crusty bread isn't bad either!

Comfort in a bowl I tell ya...

Baked Potato Soup
Recipe by Our Best Bites

2 Tbs butter
2-3 cloves garlic, minced
1/2 C flour
4 1/2 C low-fat or skim milk
1 14oz can chicken broth
4 medium baking potatoes (about 2 1/2 pounds) baked*
2 C grated cheddar (or sharp cheddar) cheese, divided
1 1/2 tsp. salt
1/2 tsp. black pepper
1 1/2 C  light sour cream, divided
1/2 C chopped green onions, divided
8 slices bacon, cooked and crumbled, divided

*don't have time to bake potatoes in the oven?  Just pierce them with a fork a few times and then pop them in the microwave.  Cook in 5 minute intervals until a knife easily pierces through them.  It usually takes 5-10 minutes.  To bake in the oven, pierce each potato with a fork and place directly on oven rack.  Bake at 375 for 45-60 minutes.

Melt butter in a stock pot over medium heat.  Add garlic and saute for 30-60 seconds until fragrant.  Add flour to pan.  Slowly add milk a little at a time while whisking constantly to eliminate lumps.  Whisk until smooth and then add chicken broth.  Bring soup just to a simmer and heat until thickened, stirring often, about 5 minutes.

Once soup is thickened, turn heat down to medium-low.  Cut potatoes in half length-wise and use a spoon to scoop out potato flesh into the pot.  Use a wooden spoon to smash potatoes, breaking up large clumps.  Add 1 1/2 C grated cheese and salt and pepper and stir until cheese is melted.  Remove pan from heat and stir in 3/4 C sour cream, 1/4 C green onions, and 4 strips of the crumbled bacon.  Add additional salt and pepper to taste. Ladle into bowls and top with each serving with the remaining sour cream, onions, cheese, and bacon.

Best Deals at Maceys--10/6-10/12

I do love Macey's. I think their normal-priced items are way overpriced, but love their meat selection, as well as their produce department. I personally buy produce through Bountiful Baskets, but a lot of times do shop here for extra produce I need, and STOCK UP ON MEAT! Plus, the meat manager is my father-in-law!  ;)

Macey's Case Lot Sale is in its last week.  They have individual prices AND case prices listed for a lot of the items.  They usually do not make you purchase the whole case.  So combining some of the items with coupons should make for some great deals!

Best Deals at Fresh Market--10/6-10/12

I do not personally shop at Fresh Market, unless they have an unbelievable deal...then I will go in. I know several people who do shop there, and LOVE it. I usually just price match Fresh Market's best deals at Walmart. So I wanted to be sure to include deals from all of the surrounding stores.

Fresh Market has started their Case Lot Sale.  Many items on their front page have a Single Price and a case price.  Since there is nothing that says you have to purchase the whole case, you SHOULD be able to purchase as many as you want out of the case. So hopefully that is how they are doing it and the items below are correct with their coupon matchups!

The prices listed below are based on Utah Wal-Mart locations. However, every single Wal-Mart may price their items lower or higher than the price I list- even if two Wal-Marts are only 2 miles away. So keep that in mind! Also, I HIGHLY recommend using their "price matching" system. It's been a while since i explained what I do, so I will have to put a detailed post on it later today.

Pumpkin & Cream Cheese Mini Cream Pies

Can you tell I love "autumn" recipes? I'm trying to incorporate the pumpkin i showed you how to make (or you can just buy it) in any way I possibly can. If you missed it, you can check it out here. And these are DIVINE!  There are also 2 other yummy fall recipes I posted earlier, you can check out here, here, and here.

If you're wondering what a mini cream pie is like, the cakes are kind of like a cross between a cake and cookies that never flatten back down. The batter is thicker than cake batter--kind of along the lines of quick bread batter.

To make them, you sift together flour, salt, baking soda, baking powder, cinnamon, ginger, and nutmeg.

In a large bowl, you beat brown sugar, white sugar, and oil

Add in 3 cups of pumpkin puree (which ends up being ALMOST 1 28-0z. can). Add 2 eggs and then slowly add in the flour mixture.

The second time I made these, I made some larger pies with a 1-tablespoon cookie scoop as well as some smaller, bite-sized ones using a 1/2 tablespoon measuring spoon.

They were both adorable and tasty and I'd totally recommend doing it either way. If you make the smaller ones, they're a little more manageable and you don't feel quite so guilty when you're done, but they take longer to make because you're using less batter at once. The larger ones are quite impressive!

You'll want to bake them for about 10-14 minutes depending on your oven (mine was 13 minutes on the nose)--you want them to be firm but not overdone. If there's any hint of jiggle or softness on top, let them bake for another 1-2 minutes. Allow them to cool on the pan for 5 minutes and then transfer them to a cooling rack.

While the cakes are baking, you'll want to make your filling.

In a large bowl, beat 1/2 c. butter on high for 1-2 minutes. Add 1 8-oz. package of cream cheese and beat until smooth. Beat in 3 c. powdered sugar, 1 tsp. vanilla, and 3 tablespoons of maple syrup (or about 1/2-1 tsp. maple extract). Transfer the filling to a plastic bag and cut about a 3/4-1" hole in the corner.

Then flip the cooled pies over on a flat surface. Squeeze a few tablespoons of filling onto every other cake and then top them off with the remaining cakes. At this point, before anyone else knows, you need to pick one up and feel the luscious texture of the cake.

And then take a bite. Yum!

These can be stored in an airtight container in the refrigerator. They taste awesome cold, or you can allow them to return to room temperature before serving.

Pumpkin and Cream Cheese Mini Cream Pies

Cakes

3 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 Tbsp. cinnamon
1/2 tsp. nutmeg
1 tsp. ground ginger
1 c. oil
1 c. dark brown sugar
1 c. white sugar
3 c. pumpkin puree
1 tsp. vanilla
2 eggs

Cream Cheese Filling

1/2 c. (1 stick) butter
1 8-oz. package cream cheese (you could use light)
3 c. powdered sugar
3 tablespoons maple syrup of 1/2-1 tsp. maple extract
1 tsp. vanilla

Preheat oven to 350.

Lightly spoon the flour into the measuring cup and level with a knife. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg. Set aside. In a large bowl, beat together the brown sugar, white sugar, and oil. Add the pumpkin puree and mix well. Add the vanilla and eggs and mix well. Slowly add in the flour mixture and mix until combined.

Using a 1 tablespoon scoop or a 1/2 tablespoon measure, drop the batter onto a baking sheet (lined, if possible, but not necessary), leaving about 1" between the batter. Try to keep the batter as circular as possible. Bake for 10-14 minutes or until the tops are done and a toothpick inserted into the middle of one of the cakes comes out clean. Remove from oven and allow to cool for 5 minutes on the pan and then transfer to a cooling rack.

To prepare the filling, beat the butter on high for 1-2 minutes until smooth and fluffy. Add the cream cheese and beat until smooth. Add the powdered sugar, maple, and vanilla and beat until combined. Transfer to a large Ziploc bag and cut 1/2"-1" off the corner.

Flip the cakes over on a flat surface. Squeeze about 2-3 tablespoons of filling per large whoopie pie (less if you used a 1/2 tablespoon measure) onto every other cake. Top each pie with the remaining cakes. Serve immediately if possible; otherwise, these can be refrigerated in an airtight container. Makes about 30 large whoopie pies.

October Visiting Teaching Handouts and Ideas!

October is here, and the Visiting Teaching message for the month is to be selected from the special temple issue of the Ensign. I chose a portion of the article by President Monson to share with the women I visit teach.

I loved the story of the grandfather who took his small granddaughter on a special trip to the temple for her birthday. As the young girl placed her hand on the door of the temple, the grandfather told her to, "Remember that this day you touched the temple. One day you will go inside.” President Monson spoke of the appreciation the little girl gained of the temple that day, how, "...she had touched the temple, and the temple had touched her."

I was able to find a couple cute ideas online of very talented women who have put together a few fun ideas you can do/give for the ladies you visit teach. It's a really cute little paper mirror she cut out, and glued on a small round mirror on it, with an attached white bow and dangling paper temple. The quote she wrote on the handout was "As We touch the Temple Our lives will Reflect Our Faith." SO CUTE! (smallandsimplethings)

Another cute idea she had was this little simple handout (all you have to do is print it out and you can put it on some cute paper or decorate it if you want). You can Download Oct.Visiting teaching handout on the provided link.

There was another idea where printed a quote from the prophet's article on her handout, underneath a fun dot-to-dot of the Salt Lake temple (found on lds.org).  She says, "as we touch our dot-to-dot temple, we can reflect on all the ways the temple has touched, and can touch our lives.

To present her handout, she rolled up the paper, slid a homemade flower rubber band around it, and attach a pen and a tag. The flowers are really simple to make.

She gathered three white flower pieces, a button and a white hair band, then sewed it all together through the button holes. You could just buy flowers from a dollar store. Simply disassemble the flower, remove all the plastic pieces, and then sew up with your band and button. (seemevisitteach)

There was another cute idea that I found with this cute little compilation of the temple, and some cute quotes for the October visiting teaching handout from President  Monson's talk. She also used the photo from the Ensign cover. So cute (alittletipsy) and talented! She does not mind printing and using it as a handout, so feel free to do so!

If you want to go "all-out," you can always do this last project. It's so creative and amazing! I haven't quite decided which of these I'm doing for the ladies I visit teach yet. I may try pulling this one off, but it depends on how much time I have in the next week. Either way, it's absolutely adorable!
The Temple is for Families, for everyone, one of the greatest treasures we have in Mortality. She compiled the most beautiful picture of the temple that she doesn't mind sharing with everyone. You print it off, and give it with a box, or even put it on one of those blocks. I will post her instructions at the end of this. If you paste it or put it on a box, give the box wrapped up with treasures inside, etc.

Here is the link to the beautiful, printable picture. She also said she doesn't mind if you use it on her post.  Download VT_decoupage_plaque_duotone_Aug2010

Temple Blocks (smallandsimplethings)

1. I found a picture that I thought would work; made it the size I wanted; then aged the picture. (Picture size was 4 1/2 x 6")
2. I printed the picture on card stock. I find that the thicker paper works better; you don't get all the bubbles and holds up better than regular printing paper.
3. Cut the picture out.
4. Cut the wood out to the size you need - I cut mine to 7"long and 5 1/4" wide (that is the size of the wood) and it 1 1/4" wide (so in other words it’s a 2x6 board they always call the board a bigger size then they really are.)
*also most hardware stores will cut the wood for you if you’re in need, just give them the size you need or find a handy home teacher and tell him you are in need!
5. Sand it up really good- so it’s smooth.
6. Paint your block any color you like, I did my black - let it dry.
7. Sand around the edges if you like or just leave as is.
8. With a sponge brush put decoupage finish on the front side of the wood, and then on the back side of your picture - make sure you cover it all. (Or use mod Pod for paper)
9. Place the picture on the wood, center it where you would like it, I left a little extra on the right side where the ribbon is (so mine is a little off center).
10. Take an old credit card (pop stick, etc) and run it along the picture to take out any bubbles. (Clean your card off each time.)
11. Let it sit for about 1 minute.
12. If you like sand very gentle around the picture, just to ruff it up some, or leave as is.
13. Spread some more decoupage over the top of the picture, making sure it’s even and smooth. Let dry
14. Add whatever kind of ribbon you want or have sitting around or leave as is.
